Staying home to avoid the heat?



You'll find peaches out now, so here's a tasty summer treat


Cookie Peach Cobbler


2-1/2 pounds Georgia peaches, peeled and sliced ( 5 cups)

1/4 cup sugar

1/2 teaspoon ground cinnamon

2 tablespoons cornstarch

1/2 cup light corn syrup

1 package refrigerated sugar cookie dough (Mom liked to take short cuts from time to time)


Place peaches in 8X8X2 inch baking dish. In a small bowl, srit sugar, corstarch, and cinnamon (If you don't like cinnamon, substitutes are fine) Gradually stir in corn syrup until smooth. Pour over peaches, toss to coat well. slice cookie dough into 1/4 inch slices. Arrange slices in rows on to of peach mixture. Bake at 350 degrees for 1 hour

until golden brown. ( if you have a convection oven, it will take less time. Just keep watching) Cool. If desired, serve with ice cream.
