Here's Mama Nell's mouthwatering French Market Bean Soup recipe, packed with various beans and flavorful sausage. This easy-to-follow recipe will guide you step-by-step to create a bowl of goodness--without the side effects.

 


French Market Bean Soup


Ingredients


1 and1/2 cups bean mixture

Hambone & trimmings ( or sausage, shrimp, chicken)

1 can tomatoes

1 onion, chopped

1/2 clove garlic, minced

Juice of 1 lemon

1 green banana pepper or hot sauce to taste

Salt and pepper to taste


Bean Mixture: navy beans, great northern, baby limas, large limas, pintos, red kidney beans, small red Japanese beans, lentils, and barley. OR--simply buy a packet of 15 bean soup mix and discard the flavor packet.


Serves 10-12. The bean soup mix serves 16, so you can add more of the other ingredients if you want to use the whole packet of beans.

Directions


Wash beans and soak overnight

Drain and add water (about 6 cups)

Add bone and/or meat & simmer 3 hours ( see note before proceeding)

Add remaining ingredients and cook 30 min.



Note:

The following method will rid beans of hard-to-digest carbohydrates that cause stomach distress:

Soak overnight. The next day, discard soaking water, bring legumes to a boil in fresh water, and simmer covered for 30 min. Drain and discard water. At this point add fresh water and commence cooking the soup.
