Nana's Homemade Lasagna

My grandmother loved to cook. This wasn’t a handed-down recipe; her ancestors were Scots. Who knows? They might have been seafaring. If you want something rewarding to fill your home-bound hours, here's the thing! Nana’s Homemade Lasagna First Step 1 large onion 1 clove garlic 6 sprigs parsley 1/4 cup salad oil 1 large can tomatoes ( 1 lb. 12 oz.) 1 can tomato paste 2 bay leaves 1 tsp salt 1/4 tsp pepper 1/2 cup water 1 lb. ground beef Second Step 1 small onion 4 Tbsp. butter 3 Tbsp. flour 3/4 cup grated Parmesan cheese 2 cups milk 2 egg yolks Third Step 1 lb. lasagna noodles Cottage cheese ( 1/2 carton) First step—meat sauce Chop onion, garlic, parsley & sauté in oil. Add tomatoes, tomato paste, bay leaves, salt, pepper, & water. Brown beef & add. Cover & cook 45 minutes. Second step—cheese sauce Chop small onion, sauté in butter mix in flour & add grated cheese & dash of salt. Gradually stir in milk & cook until thick, Add egg yolks & cook 10 min. Third Step Cook noodles & drain. Grease large baking dish. Layer noodles on bottom. Cover with tomato sauce & cheese. Ad 1/2 carton of cottage cheese. Layer until covered last with cheese sauce. Bake at 325 degrees for 20 min. Then broil until top is bubbly and golden. Serves 6 to 8.
