For your Memorial Day barbecue!

Grilled, then simmered in sauce!

Dot’s Chicken for a Crowd



Which Dot, we do not know, but this recipe is in her handwriting, and these are her comments. She doesn’t say how many chickens, but since this is a lot of sauce, I’d say at least four, halved or quartered. The simmering is brilliant.


2 quarts red wine vinegar

1 10 oz. bottle Worcestershire sauce

1 10 oz. bottle Heinz 57 (sauce)

2 cups Crisco oil ( Or canola)

2 lemons

1/3 cup salt

1/4 cup pepper


Bring to a boil.


The chickens are cooked on grill and basted in sauce in advance, then put in sauce and simmered for 15 minutes.


Makes a lot—keeps well—


Note: This recipe assumes you already know how long to grill the chicken. In Mama Nell's day, it was nearly always a charcoal grill. Today, I guess you can consult the manual that comes with your type of grill. A safe bet is about half an hour for bone-in quarters. Chicken is best cooked at 165 degrees internal temperature.
