Peanut Butter Pie for your Sweetie

Simonsen’s Peanut Butter Pie
A recipe copied down on an index card. Is Simonsen a friend or a restaurant? No one remembers. A family favorite! Be sure to take your time with the custard.
1 baked pie shell
1 cup powdered sugar
1/2 cup peanut butter
1/4 cup cornstarch
2/3 cup granulated sugar
1/2 tsp. salt
2 cups milk, scalded
3 egg yolks, beaten
3 egg whites
2 Tbsp. butter
1/4 tsp. vanilla extract
Combine powdered sugar and peanut butter until grainy. Spread half of this on baked pie shell. Mix cornstarch, sugar, and salt. Add scalded milk and mix well. Add small amount to beaten eggs and return to top of double boiler. Cook and stir until thick. Add butter and vanilla and pour into prepared pie shell. Top with meringue made from egg whites. Sprinkle remaining peanut butter mixture over meringue and bake at 325 degrees until light brown.
How to make meringue: Whip egg whites until soft peaks form. Fold in 2 Tbsp. sugar and 1/4 tsp. cream of tartar. Beat more until glossy. Can add a little more vanilla extract.
