Squash without a Racket

Everybody asked for Mattie's recipe

Summer is here, squash will be ripening, and if you grow it, you may have more than you can eat. Freeze some for the winter or give a bag to friends along with one of these easy, no-racket-required recipes.



Mattie’s Squash Casserole


2 lb. yellow squash

1/2 lb extra sharp cheese, grated

4 slices bread, crumbled

2 eggs, slightly beaten

Salt and pepper to taste

Some butter or margarine for crumbs

1 small onion


Cook squash with onion and mash, then add cheese and remaining ingredients. Butter crumbs and place on top. Place in greased casserole and bake at 350 degrees for 30 -40 min. Serve hot.





Squash Casserole II


1 1/2 cups mashed squash

1 cup cubed cheese

1 cup scalded milk

2 Tbsp. onion juice

3 Tbsp pimento

1 Tbsp. parsley flakes

3 Tbsp butter

3 eggs, beaten


Mix all ingredients. Bake at 300 degrees for 30 min.
