Stuck inside when the weather is cold and rainy? It's a great time to warm up the kitchen with loaves of homemade bread. Here's a recipe handed down from friend to friend. Mama Nell loved to make it.
Friendship Bread
Keep starter in refrigerator in a jar with hole in the top.
Feed starter every 3 to 5 days with:
1 cup warm water
1/2 cup sugar
3 tbs. instant potato flakes ( Editor’s note: I would question this, because modern potato flakes contain a preservative that kills fungi). Maybe just a little mashed potato. Where do you get starter? From a friend. This is why it’s called Friendship Bread. (I guess you could use yeast)
Set starter out of refrigerator 8 to 12 hours before using to make dough
Recipe for bread
6 Cups bread flour
1/3 cup sugar
1 Tbs. salt
1/4 cup corn oil
1 -1/2 cup warm water
1 cup starter
Mix all ingredients together in a large bowl. Put in greased bowl to rise about 8 hours. Punch down and knead. Divide into 3 loaves and put in bread pans. Brush tops with butter.
Let rise 8 hours or until ready.
Bake about 30 minutes in 350 degree oven.
